Tomme de Brebis Castello is a Janier-exclusive raw sheep’s milk hard cheese.
Originating from Corsica, it comes from a historic region of the Corsican regional park. The heights of Castello (now integrated into the region of Fiumorbo) were a well-known resting place for shepherds crossing the mountains. Traditionally the cheese is made by nomadic shepherds moving livestock between higher pastures in summer and lower valleys in winter. The cheese is made in smaller wheels, making it easier to transport and maintain.
The exterior of the cheese is marked by the colander in which it was molded. Tomme de Brebis Castello has a punchy nutty taste, combined with a surprisingly citrusy finish. Great for lovers of Pardou Chevre and other goat/sheep’s milk cheese!
