Dom Perignon named after a 17th century Benedictine monk who was an important quality pioneer for Champagne wine.
A rigorous selection process in both the vineyard and winery ensures that only the best grapes go into Dom Pérignon champagne. The final composition changes every vintage: at times a blend in perfectly equal proportions, at times up to 60% Chardonnay or 60% Pinot noir.

This wine combined the big nutty tones of age with young acidity and fresh attack. The has everything, where the butterscotch is separated from the fruit and nut aromas. This butterscotch taste remains all the way and makes up the entire, exceptionally long aftertaste. One of my three winners at the big Millennium Tasting
